Ingredients

  • 1 medium cauliflower head
  • 1 tablespoon olive oil
  • 1/2 cup broccoli florets
  • 100g chicken breast, sliced thin
  • 1 small carrot, grated
  • 1 tablespoon soy sauce (low sodium)

Directions

    Wash and cut the cauliflower into small florets.

    Pulse the florets in a food processor until they resemble rice grains. Do not over-blend.

    Heat olive oil in a large nonstick pan over medium heat.

    Add chicken slices and cook for 4–5 minutes until lightly golden.

    Add broccoli and carrots, and stir-fry for another 3 minutes.

    Add the cauliflower rice and pour soy sauce on top. Stir well for 3–4 minutes.
