Ingredients
- 1 cup dry lentils (rinsed)
- 1 carrot, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 pinch paprika
Directions

Heat olive oil in a deep pot over medium heat.

Add chopped onions and garlic, and sauté until fragrant (about 2 minutes).

Add carrots, cumin, and paprika. Stir for 1 minute to toast the spices.

Add lentils and vegetable broth, then bring to a boil.
