Ingredients

  • 1 cup quinoa (uncooked)
  • 1/2 cucumber, diced
  • 6 cherry tomatoes, halved
  • 1/4 red onion, finely sliced
  • 2 tbsp olive oil
  • juice of half a lemon
  • fresh parsley
  • optional: 50g feta cheese

Directions

    Rinse quinoa thoroughly under cold water to remove bitterness.

    In a saucepan, combine quinoa with 2 cups of water, bring to a boil, then reduce heat and simmer 15 minutes until water is absorbed.

    Let quinoa cool for 5 minutes, then fluff with a fork.

    Meanwhile, dice cucumber, slice tomatoes and onion, and chop parsley.

    In a bowl, combine cooked quinoa with vegetables.

    Drizzle olive oil and lemon juice over the top, mix gently.

    Add feta cheese if not vegan, sprinkle parsley and serve chilled or room temperature.
