Ingredients
- 2 large bananas (frozen and sliced)
- 1/4 cup full-fat coconut milk (canned for richness)
- 1/2 teaspoon vanilla extract
- a tiny pinch of sea salt (optional, brings out sweetness)

Prep your bananas at least 6 hours in advance. Peel very ripe bananas, slice them into 1-inch coins, and freeze them in a single layer in a freezer bag.

Take the frozen banana slices out of the freezer and let them sit at room temperature for about 3–5 minutes. This makes the blending process much easier.

Place the slightly thawed banana slices into a high-speed blender or a food processor.

Add the coconut milk and vanilla extract. The fat from the coconut milk is what gives it that professional 'gelato' texture.

Start blending on low speed, using a tamper if your blender has one to push the fruit down toward the blades.

Continue blending for about 45–60 seconds. You will see it transform from crumbly, to chunky, to suddenly a thick, creamy soft-serve consistency.

IMMEDIATELY serve in chilled bowls for a soft-serve experience.

For a scoopable texture, transfer the mixture to a container and freeze for another 45–60 minutes. Don't leave it longer or it will become too hard to scoop!
