What to know
Origin: Clean Condiments / Pantry Basics
Diet type: vegan
Yield: 1.5 cups
Added sugar: 0g
Natural sugar: 1g
Ingredients
- 6 oz tomato paste (look for 'no salt added' if possible)
- 1/2 cup filtered water
- 1/3 cup apple cider vinegar (with 'the mother')
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon sea salt
- a pinch of ground cloves
- 5-10 drops of liquid stevia (optional, to taste)
Directions
- 1
In a small stainless steel saucepan, whisk together the tomato paste and water until a smooth, thick sauce base forms.
- 2
Add the apple cider vinegar, garlic powder, onion powder, salt, and cloves. Whisk vigorously to ensure all spices are evenly incorporated.
- 3
Place the saucepan over medium-low heat. Bring the mixture to a very gentle simmer (watch for splattering!).
- 4
Once simmering, turn the heat down to low. Let the ketchup cook uncovered for 10–15 minutes. This allows the vinegar to mellow and the flavors to deepen.
- 5
Taste the ketchup. If you find it too tart, add a few drops of liquid stevia one at a time until the balance is perfect.
- 6
Remove from heat and let the ketchup cool completely at room temperature.
- 7
Transfer the cooled ketchup to a clean glass jar or a squeeze bottle. It will thicken further as it chills in the refrigerator.
- 8
Store in the fridge for up to 3 weeks. Use it exactly like store-bought ketchup without any of the hidden acne triggers.
