- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon sea salt
- a pinch of ground cloves
- 5-10 drops of liquid stevia (optional, to taste)

In a small stainless steel saucepan, whisk together the tomato paste and water until a smooth, thick sauce base forms.

Add the apple cider vinegar, garlic powder, onion powder, salt, and cloves. Whisk vigorously to ensure all spices are evenly incorporated.

Place the saucepan over medium-low heat. Bring the mixture to a very gentle simmer (watch for splattering!).

Once simmering, turn the heat down to low. Let the ketchup cook uncovered for 10–15 minutes. This allows the vinegar to mellow and the flavors to deepen.

Taste the ketchup. If you find it too tart, add a few drops of liquid stevia one at a time until the balance is perfect.

Remove from heat and let the ketchup cool completely at room temperature.
